INGREDIENTS,TOPING,THE MAGIC

1.TURMERIC OVER NIGHT OATS:

(5-6 servings)

INGREDIENTS:-

2 cup oats (or oats)

¼ cup chia seeds

1 tsp cinnamon

½ tsp turmeric (haldi)

3 cups of almond milk or any non-dairy milk product of choice

1½ tsp tsp vanilla extract

2 - 3 tbsp maple syrup or any sweetener of choice (you can adjust the quantity based on your preference)

MORNING AFTER:

¾ cup milk alternative

OPTIONAL TOPPINGS (feel free to go cray cray!): 

-Coconut shavings

-Blueberries

-Strawberries

-Goji berries

-Toasted almond flakes

-Sunflower & Pumpkin seeds

THE MAGIC:-

1. Add oats, chia seeds, cinnamon, and turmeric into a bowl. Gently mix with a spoon or your hands so all the ingredients are evenly distributed.

2. Add the 3 cups of milk,vanilla extract and the sweetener

4. Place the mixture in a closed container or jar and store in the refrigerator overnight (minimum 6 hours).

5. The next morning the mix will feel a little thick so add the extra milk and stir, add more if you want it a little more runny

6. Store in the refrigerator for a maximum of 5 days.

2.Chai Spiced & Almond Oatmeal

Doesn't it just sound so dreamy!!! The smell of this cooking is just divine! I cook my oatmeal for a looong time, it makes it super creamy, it ends up tasting like a creamy rich rice pudding!!

Serves: 2 people

Cook time: 15 minutes

INGREDIENTS:

1 cup quick cook oats

1 tsp chai spice

1/2 tsp cardamom

2 dates chopped

1/4 cup water

2 cups plant based milk

Toppings:

1 tbsp almond butter

sprinkle of roasted pumpkin seeds

sprinkle of shaved almonds

sprinkle of rose petals

drizzle of date syrup

THE MAGIC:

Add the oats, chai spice, cardamom, dates and water into a pan and heat on medium flame.

Once it thickens add in 1 cup of milk, let it cook for about 5 minutes until it thickens again

Add the remaining milk and continue to cook for another 5-10 minutes till thick and creamy! Pour into a bowl and sprinkle your topping

3.Curried Quinoa

Simple, tasty and nourishing!

Makes: 2 portions

Prep time: 5 minutes

Cook time: 5 minutes

Total time: 10 minutes

1 cup tricolored quinoa cooked

1 tsp rapeseed/sunflower oil or vegan butter

4-5 curry leaves

1/4-1/2 tsp salt (depending on salt preference)

THE MAGIC:

Add oil to the pan and heat.

Add the curry leaves and sautè,

Add in the cooked quinoa and salt

Stir and heat on medium flame for 2-3 minutes

♡ Sprinkle some joy, and serve with love

 

4.Spiced Avocado Toast

You know that joy when you get the perfect avocado, that cuts just right, smashes easily and has the creamiest texture..THAT JOY IS UNMATHCED.

Makes: 1 large avo toast

Prep time: 5 minutes

Total time: 10 minutes

INGREDIENTS:

1 fluffy slice of sourdough bread

1 large ripe hass avocado

1/8 tsp asafotida

1 tsp coriander and cumin powder

1/2 lime squeezed

1/4-1/2 tsp pink salt

drizzle of olive oil

Toppings

1 small watermelon radish sliced

1/2 tsp nigella seeds

sprinkle of micro greens

if you feel fancy

a drizzle of cashew cream

THE MAGIC:

Toast your sourdough

Add the avocado,hing,cumin and coriander powder, lime, salt and olive oil into a bowl and smash with a fork

Thinly slice your radish.

Scoop the smashed avocado onto your bread, if you feel fancy add a little cashew sour cream then top with your radish, micro greens and kalonji seeds.
